I just bought a speakout phone, with the $100 deal.

Can someone give me some advice on dealing with the customer service people?

1. I want to disable voicemail -- I have no use for it, and I don't want it to fill up, etc.

2. I want to change the phone number to another area code -- can this be done for free?

You'll have to ask SpeakOut CSR if VM can be disabled (or see if that option exists in the VM prompts) but AFAIK there's no charge when someone leaves you VM, so just leave a voice announcement that you don't respond to VM.

2. I want to change the phone number to another area code -- can this be done for free?

Yes, providing it's in a different area. (IOW you can't change from 647 to 416 because they're in the same area (Toronto) but there should be no problem getting a 647/416 number changed to 519/226, etc.)

Wow, the CSR was friendly and super-friendly. She turned off voicemail with no questions. And the phone number change, like you said, was free (and painless).
