Sim cards work on any phone?

I'm interested in Speakout but I hate their phones. Will any unlocked gms phone work with their simcards? I know they don't sell sim cards in stores, and I don't want to buy one online since I don't want to wait for it to be shipped to me. I want to cancel my current phone soon. So I guess I would have to buy a phone, take out the sim card and put it into another phone?

That will work just fine as long as the phone is fairly recent. (There have been revisions to SIMs over the years so phones and/or SIMs that are several years old may not work.)
