I'm pretty sure you cannot save addresses, emails, or other info on a phone SIM card. For SIM card contacts, it's pretty much just name and phone numbers. Which is why I use my Google Contacts for my phone book. Google Contacts provides many fields, including addresses, nicknames, multiple phone numbers, etc.
If you are using a non-smart phone, you won't be able to access Google Contacts, but your phone _might_ have some kind of address book application which has more datas fields than the SIM card does.

Has anyone been able to store addresses/emails etc. on a SpeakOut SIM? I have no trouble putting this info into the phone but when I try to transfer it to the SIM only the phone number shows up.

When I store directly to the SIM it doesn't provide the option of adding this info.
