I am guessing that your iPhone is seeing your Gmail account as the default account and deferring to it, even when not on wifi. You can try turning the accounts on or off when on either network, or try switching the default email account to the desired account.

I did try setting one or the other as the default account, but it didn't seem to make a difference. Turning the accounts on/off daily is a bit much, for now I think I'll live with the web interface. I've wasted enough time on it for now LOL, might try again in future.

What I could not get workign the way I wanted was the mail App. I already had my Gmail account set up as a Gmail account within the iPhone. Yesterday (at home on WiFi), I tried turning the Gmail mail off, and set up my Gmail as an Exchange account. Unfortunately, Exchange is less than ideal. What I really want is to just display the 50 newest emails in any folder - Inbox, Sent, Starred. Unfortunately, Exchange on iPhone can't do that. You have to pick the number of days to synchronize, which for my Sent mail and Starred mail, does not work.

So I figured I could set up my same account@gmail.com as both a Gmail AND Exchange, with Exchange set to 1-day for only "on the go email". It was good in theory. I could go to the Gmail and Exchange in the Mail App when on WiFi and all was well.

Then I got data set up today, and for the LIFE of me, I cannot get the Mail app to send using Exchange. I've tried everything I can think of. But whenever I create a new email, one particular "account@gmail.com" in the From section is selected. When I send, I eventually get a timeout from smtp.gmail.com. If I try and select the OTHER "account@gmail.com" instance, it always seems to revert to the default. That is, I can select the OTHER one, but if I select the From section again, the selection has reverted back to the original.

With ONLY an Exchange account set up it's fine, but I can't live with that.

So I've resigned myself to living with Gmail via Safari. The web interface is still fine. I just need to sync my iPhone contacts over to my Gmail account and I think this will be still a suitable solution.

That is correct, gmail set up as exchange account works using the default Mail app.

Thank you for the swift answer, I wasn't expecting anything for a day or so. That's fantastic information though! Given that Rogers seem to have removed the IMEI block for iPhone 3G units, I think I'm going to take the plunge and try the SO Unlimited Browsing service. It'll mostly be for email on the go, so with that being pretty much plain text, I don't think speed will be an issue. I'm really excited to give this a try!

I ended up reading a few more long threads on this forum and found a workaround. I added an exchange account for gmail. The only drawback comparing to my original imap gmail is that I cannot specify a different "from" address - I have to use the gmail address as the sender.
On a related note, anyone found an IM client that works? Fring and Nimbuzz do not work.

So can you please confirm that setting up Gmail as an Exchange account then allows you to use the iPhone Mail App directly for email (and thus you do not need to visit Gmail via Safari)?
