If i take advantage of the promotion that starts on November 16th, i really only have to puchase that package once right?

if i ever need a new phone, i can always but an unlocked one and just insert my SIM. So, the only purpose for me to go into a 7-11 store would be for me to just purchase my airtime in the future...right?

As long as i keep my SIM and account active...the SIM is the "real" key to service.
