If you buy the phone from a 7-11 store, is it possible that if you keep the sim card and return the phone, that the SO sim card wont work?

No, but 7-Eleven won't let you do a return of the package without the sim card.

They always do. They make sure everything that was in the package being returned is complete (sim card, phone, manuals etc)
Why try and scam them? They are the most affordable wireless company in Canada, and you seem like you want to scam them to get a sim card. Sheesh.
