These cell phone plans are new to me… when do you select the phone number? Also can you pick any area to get a number from? Like Picton, Ontario for example even though we have no 7-eleven in the area?
Thanks!

When you buy a phone from a 7-eleven it has a number already on it from whatever area you bought it in. If you buy one but live in a place with no 7-elevens all you do is call customer service and they will change it to any area code you want.

Andrew,
Don't forget that you have to go to a 7-11 every so often to buy airtime for it – you can't buy airtime online or anywhere other than a 7-11.
You might want to consider PetroCanada Mobility. It's run by the same company as 7-11 Speakout and the rates and expiry are almost the same. Although, PetroCan has never had the very popular "Buy $100 of airtime – Get $75 off a handset" promotion that Speakout occasionally has.

Even if there are no 7-11s in Picton, you could still buy airtime coupons at any 7-11 (Belleville? Kingston?) and use those. You could also get a friend to buy them for you and send you the code you need to apply the airtime credit, then reimburse them for the cost. If you are a light user then you'd only need to do this once a year.
