OK; I want to reap the benefits of SO, but also be able to use my phone on future trips in Europe or maybe even Asia.
I'm thinking buy an SO phone/SIM package and then a better quad GSM phone?? Is this the best way?
Is there a specific GSM phone model that will do it for me?

SO does not work outside of Canada. Your best bet would be to get a quad band phone, then buy a sim as soon as you get to the country you will visit.

I know that the SIM doesn't work, I'm just wondering if the 5200 is enough (one european band, not sure about Asia) or if it's better to buy an unlocked GSM and use the SO sim and sell/throw away the phone,….

Yes. You can get something like the Motorola RAZR for $100 or less. Then buy SIMs in the countries you will be visiting or get an "international" SIM like Mobal or United Mobile. That's what I've been doing for the past couple of years. See also http://www.prepaidgsm.net/forum/
