Can anyone tell me if its possible to change the opening "7-11 graphic" that shows when you turn on the Nokia 2610? And is it possible to change or remove the "Speakout" text from the main screen?

I've tried everything so far and then i read that the speakout title is impossible to change, sux doesn't it??

I dont know about the "7 – eleven" logo when you turn on the cell. The "SpeakOut" text on the main screen is not remove able but if you get a dark wallpaper ( black, dark blue, etc.) it will not appear.

The logo and other stuff can be changed with software like the Oxygen Phone Manager II and a USB cable: http://www.opm-2.com/OPM2/
Disclaimer: haven't tried it personally.

Just use your camera, take a dark wallpaper from the computer and use it.
